Baby Shower Recipes
This is a healthy version of a carrot cream cheese cake that is nice to serve at a baby shower with the intention that the recipe will be later used on baby's first birthday. Have everyone bring a healthy recipe to the shower for baby's first year and put together a recipe file for the Mom-to-be to reference when baby starts eating solid foods.
2 c. organic whole wheat flour
½ tsp. salt 2 tsp cinnamon
2 tsp. soda
1 c. honey
4 Tbsp. brown sugar
4 large eggs
1 ½ c. olive or safflower oil
2 c. grated organic carrots
9x13” pan lined with baking paper
Sift all the dry ingredients together in a bowl.
Beat the eggs, honey and oil together in another bowl.
Add these to dry ingredients along with the carrots and mix well.
Bake 30 min at 350 degrees F.
Top with cream cheese icing.
Cream Cheese Icing
(Cream Cheese is high in saturated fats so you can substitute kefir cheese or tofu if you like)
2 8 oz packages of cream cheese
¼ c honey
1 tsp vanilla
A Tbsp butter (optional)
With room temp cream cheese blend the rest
of the ingredients.
